Working conditions inside the Death Star must have been horrendous. Things like not having safety railings near potential dangerous falls, and no individuals expression of creativity seem to be just some of many issues among those that work there. So, my question is: "Given that Dark Vader has the force from the dark side and Jedi training, could a union exist inside the Death Star without it being squished by Dark Vader?"

Unlikely. Darth Vader can kill the entire army of the republic without trying too hard, the only reason he doesn't is because they are bidding his will. I strongly doubt anyone would try to unionize.
Not to mention, the power of the force allows you to persuade the minds of the weak. So the union (which in most cases is primarily large masses of weak minded led by a few strong willed people) would rather quickly unravel in Darth Vader's favor with a minor bit of coercion.

Well, it has been adequately covered previously, but basically: no, Darth Vader could easily use the Force to regain the weaker-minded union members, and just kill the leaders. Also, if you didn't notice, he scares the freaking shirt out of all of his men (accept that one guy he strangled with his mind), so I don't think they'd ever even attempt it.
