Super simple food....
Baked Chicken and Double Baked Potatoes 1 Chicken Thigh - bone in - Adds flavor so you don't have to spice that much. 1 baking potato Sour Cream 3 cheese blend salt pepper garlic powder olive oil
Directions: Oven on 350 degrees Put Chicken on baking sheet - If you have a grated pan system it would be ideal. add to chicken a small drizzle of Olive Oil, Salt, Pepper, and a small bit of garlic powder.
Put a baking potato straight on the rack and cook it to where you can stick a fork in in and it fall off without help. Approx. 50 minutes
Take potato out cut in half long way, take a spoon, and dig out the middle part of the potato.
mixing the middle of the potato, with about 2-4 tsp of sour cream depending how big the potato is, with cheese the amount is up to you.
Place the potato halves back in the over til cheese melts Approx. 7-10 minutes
The chicken will be done now IF it was full defrosted before starting to cook.

Make Scramble Eggs for breakfast! Buy free-range or organic eggs! Preheat a pan and put a small amount of butter on it. Let it melt. Break 3 eggs in (or as many as you like) when the butter starts to sizzle. Stir constantly so the eggs don't stick to the bottom. Throw some salt in but not too much ( If it turns out they need more salt you can always put some on at the end, but if you put too much salt at the beginning it will not be so tasty. Just telling you from my experience) . Take the pan off of the heater when the eggs are solid but not too solid. Stir gently for another moment and serve. Eat with bread or a roll..whatever you prefer really There is a second option with onion if you'd like. All you have to do is chop some onion into small squares and throw onto the frying pan. Let the onion get that golden glossy colour and then break in some eggs. Enjoy

moneefiction Hey good to see someone on the moon that knows a little bit about nutrition. @dan I'd suggest living off egg and bacon for breakfast. Maybe put some spinach in the omelette. And use butter! No margarine or unhealthy vegetable oils! For lunch or snack make sandwiches. Buy some tasty deli meats and add some slices of onion, pickled banana peppers, chopped iceberg lettuce nd whatever else you like (tomatoes, cucumbers, pickles..) and use whole grain or sourdough bread, not white bread! For dinner.. I got nothin.

Hey Dan,
I know a lot of other people have more insightful posts with Website links etc. But I thought I'd add my Cooking ideas with you as a fellow person who is not excellent in the Kitchen either. ( once I almost set the kitchen on fire! D: )
Something I like to do that is fairly quick and easy is boil up some pasta and whilst that is cooking chop up and add prefered vegetables ( and some Red Onion for flavour ) into a wok and once they are almost done add some sauce of your chosing and hey presto healthy Pasta with Vegetables and sauce~
Ps. Courgette's are yummy~
EDIT: P.P.S. I have Porridge added with Nutella for Breakfast. If you guys across the pond don't aren't farmiliar with Nutella, it's a healthy Chocolate Spread~

Chef John is awesome and the recipes are as diverse as they are easy. Dan, I think that you should check out the channel and maybe even get in touch with Chef John for an episode of d3p0! (He is really cool)

I am like a master at making quick meals i cook all the time at work.....Baked BBQ Chicken is good and easy...also tator tot casserole....or Frito Pie
These are all Original Recipes.....
Frito Pie... Brown Ground beef in a skillet...drain...mix with a can of Hormel chili, and cheese or salsa whatever and heat in microwave for 1 min... add in Frito chips and enjoy
Baked BBQ Chicken Bake Thawed Boneless Skinless Chicken Breasts...in a casserole dish @ 400 degrees for 25 min....flip chicken smother with BBQ Sauce(or Ranch) bake for another 20 min...and enjoy
Tator Tot Casserole Brown 1 lb ground beef in a skillet, drain...mix with 2 cans of cream of mushroom soup(can substitute cream of chicken or cream of broccoli) put mixture in a 8x8 baking dish or a bread pan.. top with a layer of uncooked tator tots..bake as directed on the tator tots...Usually( 350 degrees for 30 min or until golden BROWN

Vegetarian Pastas! Standard Pasta You Will Need: -1 package of Your choice of Rotini or Penne Whole Wheat -1 jar of Pasta sauce, preferably Francisco Rinaldi -1/2 Yellow Onion sliced and separated from layers -1/2 Garlic (approx 4 or 5 cloves) minced - Half a package of white mushrooms (you can slice, keep the stems if you want) -3 tomatoes of your choice (Except for cherry tomatoes) -1 Carton of Heavy Cream Instructions for Sauce: - Heat up olive oil in pan - throw in minced garlic until slightly golden - add sliced onions, and cook til slightly brown - toss in sliced tomatoes, let cook - add mushrooms and let stand, stir occasionally -sprinkle garlic salt - pour in whole carton of cream and let boil, stirring occasionally until cream thickens - pour tomato sauce, and stir *Can adjust amounts of garlic salt for taste For Veggie Chorizio (Spicy) You will need: I package of Trader Joe's Veggie Chroizio 1 package of Whole Wheat Penne Instructions for Sauce: *Same as above, BUT put in chorizio before cream * Remove casing of chorizio (should resemble ground beef) Baked Ziti w/ Penne You will need: - Approx. 1 package (Can add more if you like it to be really cheesy) of Italian Cheese Mix (Should include Mozzarella and Parmesan) - 1 tin foil casserole dish Instructions: *Prepare sauce the same way as above - Coat the foil casserole dish in olive oil - Cook pasta to Al Dente (slightly hard to the teeth) - Drain pasta and add in casserole dish, stir - Throw in prepared sauce - Mix in as much cheese you want and stir - Top off with a generous layer of cheese - Bake in oven until cheese is melty and brown (approx 30 mins.) - Serve with garlic bread Enjoy Dan!

My go to easy to make food is schnitzel. Im not sure how healthy it may be but hey, Id say homemade is always better than microwaved. What you need- chicken breast, flour egg bread crumbs salt and vegetable oil. Preperations is pretty easy. Set out three medium sized bowls and fill one with flour, one with whisked eggs, and one with bread crumbs. Tenderize the chicken (aka beat it with a mallet). Sprinkle about a pinch of salt on the chicken. Take each peice of chicken and dip in each bowl in this order, making sure the chicked is properly covered in each, 1- Flour 2- Egg 3- Bread crumbs. Before or after dipping the chicken in each, heat up an oiled pan. There should be a thin layer of oil on the bottom of the pan. Place the breaded chicken in the pan, wait til golden brown on one side, and then flip. It can then be eaten hot or cold, and with a peice of bread or potatoes (I prefer mashed).
Those instructions probably arent really clear. Maybe its better to just google it.

Um... Don't know if anyone else suggested this but lasagne is pretty easy to make, turns out great, and will keep for a week or so if there are left overs.
Ingredients: lasagne pasta your choice of tomato sauce (I've use pasta sauce and pizza sauce for this and it was fine) cottage cheese mozarella cheese bocca crumble (optional. Can use pre cooked ground beef if you want) parsley (fresh is great, but what you can get in the spice section of the grcery store is fine) pepper and salt to taste 2 eggs
Boil water in the large pot you have, filled about three-quarters of the way. When it's boiling put the pasta in until it's done (takes a little longer than with spagetti) add about a third of the pasta at a time so they don't all stick to together in the pot, a minute or two between each third. when that's done run cold water through the pot instead of straining it (if you try straining it without some help, you'll loose some of your pasta to the sink)
For the filling, put the container of cottage cheese, about two handfuls of mozarella (I know really precise, right) the two eggs, salt, pepper, parsley, and stir until the egg is pretty evenly mixed in. Then cover it until your ready to put the lasagne together.
Hopefully by now the pasta is completely done and ready to go. Heat the oven to 375. You can use almost any rectangular glass pan for lasagne (or those aluminum pans from the store that are for pot lucks and stuff)
Coat the bottom in a thin layer of your sauce and the lay your first layer of pasta over that. Depending on the dimensions of your chosen pan, the pasta maybe too long or too short to run the legnth over it. If too long, just carefully rip the excess of and put it back in with the other pasta. If too short, more than likely some of the pasta fell apart while you tried to take it out of the pot, just use the small pieces to fill in the holes.
Once you have your first layer down, cover it with your filling. You can lay it on as thick or thin as you like, just keep in mind how deep the pan your using is and that you still have more layers to go. If you wanted bocca or ground beef, nows when you add it. Not too much, just about half a cup or so per layer, spread out.
On top of this you put about a handful of the mozarella, spread out.
Then put another thin layer of sauce. Put it on in dallops so it doesn't mix with the other ingredients too much.
Then put another layer of pasta and repeat.
When your done with layers, cover the pan with foil and put it into the over for about fifty minutes then check to see if the lasagne is bubbling. If it is, take the foil off and cook until the cheese is bubbling. If not, leave it for another five then check again.
When it's done, let it sit for about ten minutes then you can serve it. Wait until it's cool to store in the refrigerater. It's really good cold!

Chicken pyttipanna (Wikipedia knows what it is, so head on over there if you don't) is easy and healthy!
For one serving you will need 1 chicken breast fillet 1 small red onion A couple of mushrooms (preferably just common button mushroom) Fresh thyme Salt, pepper and rosemary if you have it Olive oil.
Chop everything up in as big pieces as you like, chuck 'em in a frying pan with the olive oil already heated in it and fry! Make sure the chicken is well made (check that it is not pink inside). Put the fresh thyme in when it's all done. If you like you can also add sweet corn at this point.
It is impossible to fail: I am a terrible cook and I can still make this!
